This heirloom from Italy, where it is known as 'Erba Stella' (with the rather lovely translation of 'star grass') is grown for its subtle taste (like a sweet, nutty mixture of parsley, spinach and kale) and crunchy texture. Winter hardy, indeed thriving in cold, rainy weather, it grows in clumps of slender green leaves, like a jagged grass, with little horns along its long edge (the eponymous horn of its English name, 'Buckshorn'). It is most delicious harvested young when the leaves are at their most succulent, when new growth will follow.

A cold-hardy salad plant for fall, winter, spring, and summer production. Small plants with rosettes of slender green leaves. Adds a crunchy texture to salads without fiber. Flower buds are edible. Re-grows after cutting, but succession sow for best quality and appearance. Sow about 30 seeds/ft., covering 1/4" or sow in plugs and transplant; thin to 4-6" apart if desired. A sweet grass lettuce resembling a narrow mizuna, Erba Stella develops into a small plant with a delicate rosette of slender green leaves. It is lovely as an addition to other greens like Rustic Arugula and Minerâs Lettuce in salads. Harvest young and tender when it is about 5' long. (OP.) Also know as Buck-horns Plaintain, Erba Stella is a unique, cold weather salad green prized in Italy for its mild nutty flavor and crunchy texture.
Sow directly outside in early spring as soon as the ground can be worked or in the fall. It can tolerate moderate frosts and be grown all winter in temperate climates.
Germination Instructions
Sow into a cold frame Mar-Sep. Sow directly May-Jun. Surface sow, thinly, onto moist, well-drained seed compost. Just cover seed with a sprinkling of soil. Keep moist. Germination should be rapid. Thin seedlings to 15cm spacing when large enough to handle.
Growing Instructions
Possibly best grown in an unheated greenhouse. Will tolerate any soil but must be kept moist at all times to do well, too little and it will wilt, too much and it will rot. This is a perennial plant but possibly best grown as an annual.
Cultivation Instructions
Will self-seed freely. Pull plants promptly if you do not want volunteer seedlings next season. A few plants can be left to go to seed if you wish to have a yearly supply of this plant. Harvest when young, simply cut near the base with scissors. New growth should form.
