aromatic herbs. Used for soups, stews, Rice dishes, refried bean dishes, and chili con carne, and the popular Puerto Rican stewed pink beans .

Pink Beans

Pink beans are small, pale, pink-colored beans with a rich, meaty flavor and a slightly powdery texture. Requiring about an hour to cook after being soaked, the pink bean is a relative of the kidney bean and turns a reddish brown when cooked. The pink bean is a favorite in chili making and can be found in many other Old West recipes as well. You can substitute the pink bean for red kidney beans or pinto beans in any recipe that calls for them.

Pink beans are a very nutritious and low-fat food, containing only 149 calories and 0.5 grams of fat per 3 ounces (100 grams).

High in protein, pink beans are a good choice for vegetarians, or anyone trying to increase protein intake.They are also a good source of potassium, phosphorous, magnesium, iron, and calcium.They can be planted from seed as soon as the soil is warm (day temperatures are around 60 degrees Farenheit), in full sun and loose, well drained soil. Bush type beans are very easy to grow and manage, reaching a height of only 2 feet tall.

 To control harvest, bush beans can be planted every two weeks.

The plant will grow up to 14 inches (36 cm) tall and produce pods 3 1/2 inches (9 cm) long; about 90 days from seed.

 Companion plants.

Bush beans: celery, corn, cucumbers, potatoes, rosemary, strawberries, summer savory. Pole beans: corn, rosemary, summer savory, scarlet runner beans, sunflowers. Do not plant beans with onions, beets, or kohlrabi.
