Wild leek seeds, also known as ramps, are a prized wild edible with a unique position in the hearts of chefs and locavores. As a type of onion, Allium tricoccum is a perennial woodland wildflower found in the eastern deciduous forest from Canada to Georgia and west to the prairie states. Its distinctive taste is highly valued by culinary professionals, making it a top pick.

Planting: Wild leek seeds have a "double dormant" phase, meaning they need two winters to sprout. While ramp seeds typically sprout after their first winter, they only develop roots in the first year, with foliage appearing in the second spring after planting. To follow the natural process,

Directly sow and lightly cover seeds with soil. For faster germination, store the seed in a cool environment for 30-60 days.Sow 2-3 wild leek seeds in each individual pot and keep lightly moist until germination.

Once the foliage reaches a safe height, carefully relocate the plants 4-6" apart. Make sure to maintain their original depth. For larger groupings, plant 2-3 seedlings together.

Growing: Proper moisture is essential for optimal growth and affects germination, growth rate, and overall plant quality in wild leeks.This plant grows best in the well drained, rich soil of a wooded area with partial or full shade. A layer of leaf mulch, the best variety of mulch for this plant, provides protection from weeds as well as conserving valuable soil moisture. Wild leek has broad leaves that die off before the flowers bloom. Wild leeks will self seed if left to drop their seed, though new plants may not be seen for several growing seasons.

Harvesting: Ensure optimal future growth by harvesting only 15% of the largest, mature plants after flowering.Take care not to damage plants that are left to grow. While harvesting, keep the leeks cool and moist. Wash the leeks thoroughly and trim off the root ends. Pack in an open container and store in a cool place.
