Although not technically spinach, this variety of Swiss chard produces an endless supply of healthy green leaves even in hot weather when traditional spinach has bolted. Its glossy green leaves are similar to spinach in both taste and appearance, and it is known for its hardiness and high yield. Unlike spinach, it matures slowly and is less likely to bolt. Best served raw or steamed, its harvest can start as early as 50 days and continue through the fall.

The Perpetual Swiss Chard, resembling spinach, features slim, pointed leaves and thin stems perfect for salads. With Mediterranean origins, it's a go-to salad green or flavoring in dishes for chefs and home cooks alike. First recorded in the US by farmer Gideon Smith and popularized after the Civil War.
Sowing: For best results, sow Swiss chard directly into well-drained, compost-enriched soil about one week after the last spring frost. Make sure to plant seeds 1/2" deep and in an area with full sun. To harvest the entire plant, allow 4-5" of space between each plant. For continual harvesting of the outer stalks, space the plants 8-10" apart to promote larger growth. Keep a continuous supply of Swiss chard by planting new seeds every two weeks. Germination typically occurs within a week. This resilient crop can withstand light frosts and is perfect for a fall harvest.
Growing:Ensure that the soil remains consistently moist and free of weeds by using a layer of mulch. Adequate moisture is vital, particularly during the seedlings' initial growth stages.
Harvesting:When the leaves of the Spinach Seeds - Perpetual Swiss Chard reach a height of 6-8", they can be harvested for greens. The entire plant can be cut at the surface of the soil. To promote continued growth and another harvest, leave an inch of stem. Alternatively, outer stalks can be harvested individually, leaving the heart to grow.
