Lemon Balm, part of the mint family, is indigenous to southern Europe, central Asia, and the Mediterranean basin. Its fragrance and taste are reminiscent of lemon, and its delicate white flowers are a magnet for honey bees. The essential oil is known for its calming properties and is commonly used in perfumes. This versatile herb can enhance a variety of dishes, from teas and poultry to pesto and seafood. Be aware that Lemon Balm can spread rapidly, so be sure to remove spent flower stalks before they release seeds.

Herbal Uses

Culinary and medicinal uses with a pleasant fragrance.

    Sowing: Start lemon balm indoors in a flat, then transplant the seedlings outdoors after the last frost. For direct sowing after the frost, keep the soil evenly moist until germination. Lemon balm can thrive in containers with proper care.

    Growing: To ensure healthy growth, regularly water Melissa officinalis, but avoid over-watering. This variety can withstand periods of drought once mature. Be sure to control weeds while the seedlings are becoming established. Keep in mind that lemon balm is attractive to bees, birds, and butterflies, but if left to spread, it can become invasive. To prevent this, remove the flowering stalks before they go to seed.

    Harvesting: Harvest fresh leaves as needed during summer and fall for optimal flavor. Avoid removing more than half the plant's growth at once for healthy growth. The leaves can be dried or frozen within 2 days at a high temperature to avoid mold.
