Capsicum annuum

Named after an elephant's ear, this variety of sweet pepper is commonly used to make ajvar in Croatia and Serbia. The fruits can reach a size of 12 inches in length and 6-8 inches in width.

Description

Large, elongated, and flat Elephant Ear chile peppers are 15-18 cm long and 10-12 cm in diameter. They have a smooth, glossy skin that ripens from green to dark red. The thick, juicy flesh has a fruity and sweet apple-like flavor and does not contain heat.

Ethnic/Cultural Info

Serbian backyards commonly grow Elephant Ear chile peppers for everyday recipes and for making the famous pepper preserve, ajvar. Developed in the 19th century, ajvar is a tasty way to preserve the abundant pepper harvest in Belgrade. 

Ajvar is a sweet and sour spread or relish made from grilled peppers, eggplant, garlic, vinegar, and served with meats, bread, or meze platters. It is also used in cevapcici, a dish of grilled meatballs stuffed with onions and coated in ajvar.

Soil & Water: Peppers require deeply-worked, well-drained soil with plenty of added organic matter and a pH of 6.0-6.8. Water deeply, but don't over water.
Planting & Growing: Start seeds indoors 8 weeks before the last frost. Direct seeding is not recommended. Stake to keep fruit off the ground and mulch for disease and weed control.
Harvesting & Storage: Harvest the first fruits early to encourage continued production through the season. Cut (don't pull) the fruit from the stems. These peppers may be harvested from the green stage through the color changes.
