Lamb’s Ear (Stachys byzantina) is one of the most distinctive and tactilely irresistible perennials in the garden — a spreading ground cover whose densely felted, silver-gray leaves are so thickly coated in soft white hairs they feel like velvet. A member of the Mint family, this drought-tolerant, deer-resistant perennial forms a low, spreading mat that looks fresh and architectural throughout the season. The ‘Big Ears’ cultivar (also known as ‘Countess Helen von Stein’) produces leaves up to 12 inches long — twice the size of the common type — for a bolder, more dramatic garden presence. Planting Guide
