About Jamaican Callaloo

Callaloo is a cornerstone of Caribbean cooking, grown and eaten across Jamaica, Trinidad & Tobago, Guyana, Barbados, Haiti, the Dominican Republic, Belize, and beyond. In Jamaica, it's typically sautéed with onion, garlic, tomatoes, thyme, and Scotch bonnet pepper — a perfect side dish for breakfast or lunch. Rich in iron, calcium, magnesium, vitamins A, B, and C, plus amino acids and carotene, it's as nutritious as it is delicious.

How to Grow

  1. Prepare soil: Loosen to 12" depth. Callaloo prefers a soil pH of 6.5–7.5 — amend with lime (too acidic) or peat moss (too alkaline) as needed.
  2. Sow seeds: When outdoor temps hold steady at 65°F+. Sprinkle seeds over prepared soil and rake lightly to cover with ½" of soil.
  3. Water: Keep soil moist during germination (10–14 days, faster in 70°F+ weather). Once seedlings develop their second set of leaves, water to 1" depth consistently.
  4. Mulch: Apply a 3" layer of bark mulch to retain moisture, improve drainage, and suppress weeds.
  5. Harvest: Pluck leaves as needed — the plant will continue producing. For microgreens, harvest at 30 days.
