Cure in a dry, shaded, well-ventilated area until the necks and outer skins are dry. Once cured, trim the roots and tops, leaving about 1 inch of stem.

Store cured onions in a cool, dry place and check regularly for softening or sprouting. Storage life depends on curing and conditions. Slice or dice for cooked dishes, or use where you want a pronounced onion flavor and colorful red rings.
