Grenadian Green Seasoning — Traditional Recipe
The essential Caribbean all-purpose seasoning base. Makes several jars — freezes beautifully.
Ingredients:
- 2 cups chopped green onions
- 2 cups chopped celery
- 2 packed cups fresh cilantro, chopped
- 1 cup fresh thyme leaves
- 2 tablespoons fresh rosemary
- 2 cups chopped onions
- 1 cup chopped garlic
- 1 finger of fresh ginger
- 2–3 whole Grenada Seasoning Peppers
- 4–5 whole cloves (optional)
- ½ teaspoon allspice (optional)
- 2 tablespoons salt
- 1 cup water or vegetable oil
- 1 teaspoon vinegar
Instructions:
- Divide all ingredients into two equal batches. Add one batch at a time to a food processor. Pulse until finely blended, drizzling in just enough water or oil to moisten the mixture. Repeat with the second batch.
- Transfer to glass jars with airtight lids. Store in the refrigerator for up to 2 weeks.
- For longer storage, pour into ice cube trays and freeze. Once frozen, transfer cubes to a zip-top freezer bag — keeps for up to 6 months.
Tip: Frozen cubes can be used directly from the freezer in soups, stews, and rice dishes. For marinades, thaw first before use.
