Capsicum Annuum: 10 Seeds

True Greek Pepperoncini is the authentic variety found in the finest Greek salads, pizzerias, and sandwich shops — not the Italian type. Wrinkled, 2½–3-inch pods are harvested immature at yellow-green and pickled for their mild, tangy flavor. No heat — purely sweet and pleasantly briny when preserved. Organically grown, high-yielding plants produce prolifically in just 65 days and thrive even in cooler climates.

Variety Details

  • Species: Capsicum annuum
  • Origin: Greece (authentic Greek variety)
  • Pod Size: 2½–3 inches long; wrinkled
  • Color Progression: Yellow-green → Yellow → Red (harvest at yellow-green)
  • Heat Level: None — sweet, mild
  • Days to Maturity: 65 days
  • Type: Organic, open-pollinated
  • Best Use: Pickling, Greek salads, pizzas, sandwiches

Starting Seeds

  • Sow ¼ inch deep indoors 8–10 weeks before last frost
  • Germination temperature: 80–85°F — heat mat recommended; 1–3 weeks to germinate
  • Soak seeds in room-temperature water for up to 24 hours before sowing
  • Use organic seed-starting mix; avoid jiffy peat pots or standard potting soil
  • Transplant outdoors after last frost when soil is consistently warm
  • Harden off over 7–14 days; bring indoors if nights drop below 55°F

Growing Tips

  • Full sun; fertile, well-drained soil — tolerates cooler climates well
  • Harvest every few days when pods reach 2½–3 inches to encourage continuous production
  • Best pickled for traditional Greek flavor; raw pods are mild and slightly bland
  • Grows well in 5-gallon containers
