Small in stature but colossal in impact, Thai Red Hot Chili peppers are the defining heat source of Southeast Asian cuisine. Originally introduced to the region by Spanish and Portuguese settlers, these fiery 2–3 inch chilies have since become inseparable from Thai, Vietnamese, and regional Asian cooking — prized for their high yield, intense 50,000–100,000 SHU heat, and vivid deep red color that brings visual fire to any dish. Compact plants are perfect for patio containers and produce abundant clusters of slender red and green chilies that can be harvested fresh or preserved — dried, pickled, or fermented.

Safe Handling

Always wear gloves when handling seeds and fruits. Wash hands thoroughly even after removing gloves — capsaicin is an extreme irritant, especially to the eyes. Avoid touching eyes or sensitive areas.

Soil & Water

Plant in fertile, well-drained soil enriched with organic matter; target pH 6.0–6.8. Water consistently; allow top inch to dry between sessions. Mulch to retain soil moisture and warmth.

Planting & Growing Tips

  • Start seeds indoors 8–10 weeks before the last expected frost; sow ¼ inch deep in organic seed-starting mix.
  • Maintain 80–85°F (27–29°C) soil temperature; use a seedling heat mat. Germination: 1–3 weeks.
  • Transplant outdoors 2–4 weeks after the last frost when air temp reaches 70°F and soil temp is at least 65°F.
  • In USDA zones 9–10, can also sow in midsummer for a fall crop.
  • Container growing: compact habit makes it excellent for 3–5 gallon pots on patios and balconies.

Harvest Tips

  • Harvest when peppers have fully transitioned from green to red for peak heat.
  • Use garden scissors or gloves to avoid touching the interior of broken fruits — capsaicin is a strong irritant. Wash hands thoroughly after harvesting.
  • Excellent dried, pickled, fermented, or used fresh in Thai curry pastes, stir-fries, and dipping sauces.
