Grow green lentils for your garden or sprout them at home. These versatile seeds bring the familiar, earthy flavor of lentils to soups, stews, curries and dhal.

About this variety

• Branching annual plants that grow about 30–40 cm tall
• Flowers may be white, lilac or pale blue
• Small pods about 1 cm long, typically containing two seeds

Growing information

Choose a sunny spot for best seed production. Lentils can grow in many soil types; prepare the soil so it is loose and well drained, and avoid waterlogged conditions. Sow according to the spacing and depth on your seed packet, and water steadily while plants establish. Allow pods to mature and dry before harvesting lentils for storage.

How to sprout

1. Soak 2 tablespoons of seeds for 8–12 hours.
2. Drain, rinse and drain well twice a day, morning and evening.
3. Sprouts are typically ready in 5–6 days. Keep equipment clean and refrigerate sprouts when ready.

In the kitchen

Cook lentils in soups, stews, curries and dhal, or serve them with rice and vegetables. Young pods may also be cooked like green beans.
