Grow very hot Barbados peppers, also known as Bajan habaneros, for flavorful Caribbean sauces and cooking. The small, wrinkled pods develop from light green through orange to red, bringing fruity character alongside intense heat. A few homegrown peppers can turn a homemade Bajan pepper sauce into a bold kitchen favorite.

Sowing and growing

Start seeds indoors about 10–12 weeks before the last expected frost. Sow 1/4 inch deep in a seed-starting mix and maintain warm, evenly moist soil without waterlogging. Gentle bottom heat can help. Germination may take 2–4 weeks, sometimes longer.

Harden seedlings off gradually. Transplant after frost danger has passed and nights remain above 55°F (13°C), into a sunny position with fertile, well-drained soil enriched with compost. Water consistently and mulch to help retain moisture. For containers, choose a pot of at least 5 gallons with drainage holes.

Harvest and kitchen uses

Let peppers ripen to red for fully developed fruity flavor, then snip them from the plant with garden scissors. Use sparingly in Bajan pepper sauce, Caribbean hot sauces, marinades, or jerk-style seasoning. Add small amounts gradually to suit your heat tolerance.
