The Aji Lemon Drop — also known as Aji Limon, Aji Limo, or Peru Yellow — is a beloved Capsicum baccatum from Peru with pre-Columbian roots. Bright yellow pods deliver a distinctive citrus punch: zesty lemon-lime aroma, medium-hot heat, and complex floral and fruity undertones. One of the most flavorful peppers in the aji family, exceptional for fresh salsas, ceviches, hot sauces, and South American cuisine.
