Few peppers carry the cultural weight and culinary prestige of the Calabrian Chilli. Born in the sun-scorched foothills of Calabria, southern Italy, this legendary pepper is the backbone of Italian antipasti, the fire behind Nduja, and a staple on tables from Reggio to Rome. Grow a piece of Italian culinary heritage in your own garden.

Growing Instructions
Starting Seeds Indoors
- Sow seeds ¼" deep in warm, organic seed-starting mix
- Use gentle bottom heat (heating mat recommended) — peppers require warmth to germinate
- Germination can take up to 30 days — start early and be patient
- Maintain good air circulation and avoid overwatering to prevent fungal issues
- Avoid peat pots or plugs; use organic seed-starting material for best results
- Allow 7–10 weeks of indoor growth before transplanting outdoors
Transplanting & Outdoor Care
- Transplant outdoors only once soil is consistently warm
- Harden off gradually over 1–2 weeks before full sun exposure
- At planting, enrich the hole with a generous shovel of compost
- Mulch around the base with 1–2" of compost to retain moisture and suppress weeds
- Feed with compost tea every few weeks for the first 6 weeks of growth
Ongoing Growing Conditions
- Soil: Fertile, well-draining — mirrors ideal tomato-growing conditions
- Sun: Full sun for best yields and heat development
- Water: Consistent moisture — at least 1" per week; use soaker hoses during hot or dry spells
- Fertilizer: Slow-release fertilizer at transplant; liquid feed every two weeks once blooms appear
Container Growing
- Calabrian Chillis adapt beautifully to container life — ideal for patios, balconies, and indoor kitchens
- Use 5-gallon containers minimum to prevent root crowding
- Can be grown year-round indoors in cooler climates
Harvest Tips
- Harvest when peppers are fully mature and deeply colored using garden scissors
- Regular harvesting encourages the plant to produce new buds and extend your yield
- Use fresh, dried, ground, or preserved in oil — the flavor only deepens with preparation
