Lentils are annual plants producing lens-shaped seeds. A cousin of the bean, the lentil belongs to the legume family, or those with seeds that grow within pods. Lentils are quite rich in iron and have the highest levels of protein of any vegetable next to soybeans. Once you know the right soil and climate conditions you can grow your own lentils.
Organic Green Lentils
A famous variety of small green lentils known for their earthy flavor. French green lentils, also known as Puy lentils were originally grown in Puy, France in the volcanic soil there, but are now also grown in Italy and North America. They are known for their rich peppery flavor and ability to retain their firmness after being cooked.
Planting suggestions: Sow in Spring. A cool season legume crop that finishes in the summer heat. Harvest when pods are rattling but before they crack open! Plants may still have some flowers on them with finished pods ready. Small pods contain 2 lentils each with 1 to 2 dozen pods per plant. Cut or pull up plants and dry them on tarps for about a week to dry completely. Thresh and winnow.
Potatoes, cucumbers, summer savory are companion plants. Avoid planting lentils with onions or garlic.
