Michihili Chinese Cabbage — also known as Napa Cabbage and Pe Tsai — is one of the most widely grown Chinese cabbage varieties in American commercial production, and for good reason. It produces dense, cylindrical heads 16–18" tall and 4" in diameter with dark green outer leaves, fully blanched white interiors, and a sweet, mild, delicately crinkled flavor that makes it the go-to cabbage for kimchi, hot pot, pickling, stir-fries, salads, and soups. Crisp white veins, savoyed texture, and a prominent rib make it as beautiful in the kitchen as it is productive in the garden.
