Grow Joi Choi hybrid pak choi for bright green leaves and broad, crisp white stems. Also called bok choy, this leafy Asian vegetable can be harvested young for tender greens or allowed to develop into larger, upright plants. Pick a few plants for a quick stir-fry, or add washed leaves and sliced stems to a warming bowl of soup.

When to sow

Plan for growth during mild weather. Spring and late-summer sowings can work well, depending on your local climate. Time fall plantings to allow sufficient growth before severe cold, and avoid having young plants exposed to prolonged chilling.

Pak choi can bolt, or produce a flowering stalk, in response to temperature stress and seasonal conditions. Joi Choi is adaptable, but no variety is immune to bolting. Steady moisture and a suitable planting window help support leafy growth.

Sowing and planting

  1. Choose a sunny site with fertile, well-drained soil. Light afternoon shade may help in warmer conditions.
  2. Sow approximately 1/4 inch deep in prepared soil or seed-starting mix.
  3. Keep the growing medium evenly moist while seeds germinate and seedlings establish.
  4. Thin plants to approximately 10–12 inches apart for larger plants. Use closer spacing for young harvests, allowing enough airflow.
  5. If starting in modules, transplant while seedlings are young and handle roots gently.

Growing care

Water consistently rather than allowing repeated drying and soaking. Mulch around established plants to help conserve moisture, keeping material away from the stems. Feed according to soil needs and the label directions of a fertilizer suitable for vegetables.

Check regularly for flea beetles, caterpillars, and slugs. A suitable insect barrier can help protect young plants when installed securely and given room for growth. Inspect beneath the cover as plants develop.

Harvesting

Harvest young plants for baby bok choy or wait until plants reach the size you prefer. Cut whole plants near soil level with a clean knife. A few outer leaves can also be picked while leaving the growing center intact, although repeat harvests depend on plant health and growing conditions.

Harvest promptly if plants begin to flower. Maturity dates are estimates, not a guaranteed harvest schedule.

From garden to kitchen

Wash thoroughly, especially around the bases of the stalks. For even cooking, add sliced white stems before the tender green leaves. Enjoy steamed, braised, or stir-fried, or add to soups near the end of cooking.

Seed storage

Store unused seeds sealed in a cool, dry, dark place. Keep away from moisture and temperature extremes, and label the packet for your next planting.
