Rampion (Campanula rapunculus) is a fascinating dual-purpose plant — grown for both its edible roots and leaves, and its ornamental lilac-blue bell-shaped flowers. Once widely cultivated across Europe as a kitchen-garden staple, rampion offers spinach-like leaves and a parsnip-flavored white root that is harvested from October onward. A rewarding heirloom for edible landscapers and heritage gardeners alike.

Culinary Uses

  • Roots: Harvest from October; used raw or cooked like radish or parsnip
  • Leaves: Eaten like spinach — raw when young, cooked when mature
  • Self-seeds freely once established

  • Germination temperature: 61–64°F (16–18°C)
  • Germination time: 14–28 days
  • Once germinated, admit air to prevent damping off
  • Transplant seedlings to 3-inch pots when large enough to handle; grow on in cooler conditions
  • Plant out after last frost, 39 inches apart
  • Can also be direct-sown in May–June in shallow drills; thin as needed

Care Notes

Easy to grow. Keep soil moist but allow it to dry between waterings. Feed monthly if desired. Watch for slugs. Cut back after flowering to encourage further blooms and prevent excessive self-seeding.
