Make room for a traditional perennial vegetable with Good King Henry. Grown for its young spring shoots and leafy greens, this kitchen-garden plant offers an alternative to annual spinach and fits naturally into perennial vegetable beds and edible landscapes. Give it time to establish, then enjoy selective harvests as seasonal growth develops.

Plant details

  • Plant: Good King Henry
  • Life cycle: Herbaceous perennial
  • Harvest: Tender spring shoots and leaves for cooking
  • Light: Full sun to partial shade
  • Soil: Fertile, well-drained soil enriched with compost
  • Spacing: Approximately 18–24 inches apart
  • USDA hardiness: Zones 3–9, depending on local conditions and drainage

Starting from seed

Start indoors approximately 6–8 weeks before the expected last frost, or sow outdoors in early spring. A cold, moist stratification period can help improve germination; the existing growing guidance recommends approximately two weeks of chilling.

Sow in a fine seed-starting mix, cover lightly, and keep evenly moist without waterlogging. After chilling, aim for cool germination conditions around 50–65°F. Germination may be slow or uneven, so allow time and avoid letting the mix dry out.

Once seedlings are large enough to handle, pot them on carefully. Gradually acclimate indoor-grown plants to outdoor conditions before transplanting.

Planting and care

Choose a permanent position with room for the clump to develop. Work compost into the soil before planting and water regularly while plants establish. Maintain moderate moisture during active growth, especially in dry spells, and keep weeds from crowding young plants.

Plants can die back in winter and resume growth in spring where conditions are suitable. Remove dead top growth after it has died back naturally. Winter survival and the length of the harvesting season vary with climate.

Harvesting

Allow plants a full growing season to establish before harvesting heavily. On established plants, take a small portion of tender shoots in spring and pick leaves selectively, leaving plenty of healthy growth to replenish the plant.

Kitchen preparation

Wash shoots and leaves thoroughly and cook before eating. Prepare tender shoots in asparagus-style dishes, or use cooked leaves as a spinach-like green in soups and other vegetable recipes. Follow a reliable recipe for preparation and start with small servings.

Please note: Good King Henry is a different plant from Caucasian spinach and ordinary annual spinach. Seeds are supplied for planting, not direct consumption.
