Adzuki Bean – Chinese Red Bean / Wase (Vigna angularis)

The Adzuki Bean (Chinese Red Bean) is one of Asia’s most important and beloved legumes — an essential ingredient in Japanese desserts, Korean sweets, Chinese soups, and much more. This early-maturing Wase Adzuki variety matures in just 60–80 days, making it ideal for shorter growing seasons and greenhouse or hoop house production. Seeds can be boiled into sweet red bean paste, simmered in soups and curries, used to pair with rice, or the young green pods can be harvested fresh and prepared like French filet beans. Flowers also attract local pollinators.

Growing Instructions

  • Plant in a sunny, well-drained location in late spring after the last frost.
  • Sow seeds 1–1.5" deep, spaced 3–6" apart in rows 18" apart.
  • Keep soil consistently moist; fertilize as needed throughout the season.
  • Does not require trellising. Flowers attract beneficial pollinators.
  • Suitable for greenhouse, cold frame, and hoop house growing.

Harvesting

  • Fresh pods: Pick young green pods in early to midsummer for fresh cooking.
  • Dried beans: Harvest the whole plant at end of season and hang indoors to dry thoroughly before shelling.
  • Sprouted beans can also be used fresh in salads and stir-fries.

Culinary Uses

Adzuki beans are traditionally prepared by boiling and mashing with sugar into anko (sweet red bean paste) for mochi, daifuku, dango, and pastries. They’re equally at home in savory soups, pureed with spices, or served alongside rice as a nourishing plant-protein staple.
