The Sakurajima Mammoth Radish is an extraordinary Japanese heirloom — grown in the volcanic soil of the Sakurajima region at the southern tip of Japan, it is renowned worldwide as the largest radish on Earth, capable of growing to an astonishing 100 pounds or more. But this isn’t just a novelty plant: beneath the giant, round, white exterior lies a core that is consistently crisp, juicy, and mild with a pleasantly sweet flavor. Prized in Japan for both pickling and cooking, where its size, mild heat, and texture make it ideal for large-batch preparations.

Growing Instructions

  • Sow seeds in late summer in fertile, deeply prepared, well-drained soil in a warm, sunny location. Deep soil preparation is critical for large root development.
  • Sow ½" deep; thin to allow ample space for root expansion.
  • Keep soil consistently moist and fertilize regularly throughout the growing season.
  • Harvest when roots reach approximately 10" in diameter for best quality. Use promptly after harvest.

Culinary Uses

  • Pickle in salt, miso, or rice bran (nukazuke) for traditional Japanese preserved radish
  • Slice or cube for soups, stews, and braised dishes
  • Grate fresh for a daikon-style condiment alongside grilled fish or meat
