Red Garnet Amaranth – Chinese Spinach / Yin Choi (Amaranthus tricolor)

Red Garnet Amaranth, also known as Chinese Spinach or Yin Choi, is one of the most versatile and nutritionally impressive plants you can grow. It serves multiple roles: microgreens and sprouts at 7–10 days, tender baby leaves for salads as the plant develops, mature greens as a spinach substitute at 40–50 days, and protein-rich grain at 120 days. Dark burgundy stems and fuchsia-tinged green leaves make it stunning in the garden and on the plate.

A remarkable heat-tolerant green that produces abundantly in hot summer weather when most leafy greens bolt and fail. Deeply embedded in Asian culinary traditions across China, India, Japan, Korea, Vietnam, and Southeast Asia — and fully at home in Western kitchens as a spinach replacement.

Growing Instructions

  • Direct sow after last frost, ¼" deep, in rows 16–18" apart in full sun, well-drained soil.
  • Thin to 10–12" apart for mature plants, or 2–3" apart if harvesting only greens.
  • In cooler climates, start indoors 4–6 weeks before transplanting.
  • Germinates in 8–10 days. Drought-tolerant once established; keep moist for more tender leaves.

Harvesting

  • Microgreens: Harvest at 1–2" when cotyledons are open.
  • Baby leaf: Harvest individual outer leaves from 3–4 weeks onward.
  • Greens (40–50 days): Harvest before flowering for best flavor and tenderness.
  • Grain (~120 days): Harvest seed heads when ripe; dry and thresh by rubbing, shaking, or winnowing.
