Jeok Gat – Korean Red Mustard (Brassica juncea)

Jeok Gat is a strikingly beautiful and deeply flavorful mustard variety popular in Korea and North China — vigorous, fast-growing, and extraordinarily versatile. Its leaves are a rich, deep purple-red with ruffled edges and a contrasting green mid-rib, making it one of the most visually dramatic greens you can grow. Young leaves are thick, tender, and delightfully spicy with an excellent bold mustard flavor. Mature leaves develop more complexity and intensity, making them ideal for pickling, cooking, and juicing.

Harvest at any stage — from microgreens at 7–14 days, to baby leaf for salads, to full maturity at 40–50 days for pickling and stir-fries. A versatile cut-and-come-again green that thrives in cool weather and performs best in mild climates. Flowers and seed pods are also edible.

Growing Instructions

  • Prepare fertile, well-drained soil. Sow in early spring or late summer/early fall in a sunny location.
  • Sow seeds ¼" deep; thin to 4–6" apart for baby leaf, 8–12" apart for mature heads.
  • Keep soil consistently moist and fertilize well — fast growth produces the best flavor and most tender leaves.
  • Plant every 2 weeks for a continuous harvest throughout the cool season.

Harvesting

  • Microgreens (7–14 days): Cut at cotyledon stage
  • Baby leaf (~3 weeks): Harvest outer leaves; plant re-grows
  • Full maturity (40–50 days): Use for pickling, stir-frying, cooking, juicing
  • Flowers and seed pods: Edible — use in salads or as garnish

Seed Saving

Allow seed heads to dry on the plant, then break open and collect seeds. Clean and dry thoroughly before storing in cool, dry conditions.
