A Versatile Heirloom Mustard for Kitchen & Garden
Mike Green Giant is a standout heirloom broad-leaved mustard — known by growers as Cabbage Leaf Mustard, Heading Leaf Mustard, and Swatow Mustard. Its large, aromatic light-green leaves with striking red veins are mildly pungent and endlessly useful: harvest at any stage from microgreens and tender baby leaves to mature heads for pickling, juicing, stir-frying, and soups. Every part of the plant is edible — roots, shoots, stems, leaves, flowers, and seed pods.
Highlights
- Heirloom, open-pollinated Brassica juncea
- Large aromatic leaves with red veins; mild, pleasantly pungent flavor
- Harvest from microgreens (any time) to full maturity at 40–45 days
- Biennial; plant height 12–18"; spacing 3–6"
- Approx. 16,000 seeds/oz
In the Kitchen
Use young leaves raw in salads and sandwiches for a mild, mustardy bite. Mature leaves excel in soups, stir-fries, and pickling. Flowers and seed pods add bold flavor and visual interest to dishes. An excellent juicing green with a peppery kick.
