Japanese Sweet Potato – Satsuma-Imo / Murasaki (Ipomoea batatas)
Satsuma-Imo, the Japanese Sweet Potato, is a beloved staple of traditional Japanese and Okinawan cuisine — and a cornerstone of one of the healthiest diets on Earth. The Okinawans, renowned for their exceptional longevity, have depended on this sweet potato for generations. It features a thin, deep purple-red skin and dense, pale yellow flesh with a distinctively nutty, mildly sweet flavor that is drier and richer than conventional sweet potatoes or yams. Baked, roasted, candied, scalloped, or made into pies — Satsuma-Imo delivers a luxurious, satisfying sweetness in any preparation.
These are live rooted slips, ready to plant — not seeds or tubers. Grown and harvested for freshness; plant promptly upon arrival.
Plant Details
- Common Names: Japanese Sweet Potato, Murasaki, Satsuma-Imo
- Skin: Thin, deep purple-red
- Flesh: Dense, pale yellow
- Flavor: Nutty, mildly sweet, drier than conventional sweet potatoes
- Best Use: Baked, roasted, candied, pies, scalloped dishes, mashed
- Product Type: Live rooted slips, ready to plant
Planting Instructions
- Plant in loose, well-drained soil in full sun after last frost. Soil looseness is the single most critical factor for large, well-shaped tubers — compacted soil will restrict root expansion.
- Containers and half-whiskey barrels work beautifully and make harvesting simple — just dump and the potatoes appear with no digging required.
- Plant slips with the bottom half in soil and the leafy top above ground. Firm gently to eliminate air pockets.
- Space 12–18" apart; water well after planting.
Care & Harvesting
- Sweet potatoes love heat. Keep consistently moist until established; reduce watering as vines mature.
- Harvest when vines begin to yellow, typically 90–120 days after planting.
- Cure harvested potatoes in a warm, humid space for 1–2 weeks before storing to develop full sweetness and extend shelf life.
