Lime-Green Spirals with Nutty, Sweet Flavor

Veronica Romanesco cauliflower produces striking lime-green heads made up of tightly arranged spirals. Its mild, nutty-sweet flavor makes it a versatile choice for roasting, steaming, and adding to vegetable dishes.

Begin with live starter plants and enjoy tending them from transplanting to harvest. Give them fertile soil, steady moisture, and a season suited to cool-weather growth, then watch the distinctive heads develop in your vegetable bed.

What You Receive

  • Variety: Veronica Romanesco.
  • Crop: Romanesco cauliflower, Brassica oleracea var. botrytis.
  • Product: Live starter plants, not seeds or harvested heads.
  • Pack options: Choose 10 or 25 plants from the size selector.
  • Harvest feature: Lime-green, spiraled heads with a mild, nutty flavor.

Starter plants require transplanting and continued care before harvest. Plant size and appearance vary with growth stage and season.

Care on Arrival

  • Unpack promptly and check the growing medium for moisture.
  • Water gently if needed and let excess water drain.
  • Keep plants in a bright, sheltered location while they recover from transit.
  • Gradually acclimate them to stronger outdoor sunlight and wind before transplanting.

Plan for a Cool-Season Crop

Romanesco performs best when head development occurs during cool weather. Choose planting dates using your local vegetable-growing calendar rather than a fixed nationwide schedule. In many areas, a late-summer planting is used for autumn harvest; suitable timing varies with climate.

Allow approximately 75–85 days after transplanting as a planning estimate, not a guaranteed harvest date. Heat, cold, plant condition, and growing care can change maturity and head development.

Planting and Growing

  • Light: Full sun, approximately 6–8 hours daily where conditions permit.
  • Soil: Fertile, well-drained soil enriched with compost.
  • Spacing: Approximately 18–24 inches between plants and 24–36 inches between rows.
  • Transplanting: Handle gently, preserve the root ball, and water thoroughly after planting.
  • Water: Maintain even moisture without waterlogging; water at soil level when practical.
  • Feeding: Fertilize according to soil needs and the label of a product suitable for vegetable crops.

Keep weeds under control and inspect plants for common brassica pests, including caterpillars and aphids. Insect netting may help protect crops where appropriate; allow room for growth and monitor conditions underneath.

Harvest and Kitchen Use

Harvest while the head is firm and tightly formed, before the spirals loosen or begin to flower. Cut with a clean knife, leaving some protective leaves around the head. Head size and yield vary with growing conditions.

Wash thoroughly before preparing. Separate into florets for steaming or roasting, or add to pasta, grain bowls, and other vegetable dishes. Refrigerate harvested heads promptly and use while fresh.
