Asian Persimmon (Diospyros kaki) — also called Japanese Persimmon, Oriental Persimmon, or simply Kaki — is one of the most beautiful and rewarding fruit trees you can grow. Large glossy leaves turn brilliant shades of yellow, orange, and red each fall; after they drop, the vivid 4" orange fruits hang like glowing lanterns on the bare branches — spectacular in the winter landscape. The fruit itself is exceptionally sweet and juicy, high in vitamins A and C, and versatile in the kitchen: eaten fresh, cooked, or dried, and used in pies, cookies, cakes, puddings, salads, and curries.

In the Kitchen

Eat fresh when fully ripe and soft for maximum sweetness. Slice into salads, blend into smoothies, or bake into puddings, pies, cookies, and cakes. Dry whole fruits for traditional East Asian dried persimmon (hoshigaki in Japan, gotgam in Korea). Use in curries and savory preparations for a sweet, tropical counterpoint.

Growing from Seed

• Stratification required: Chill seeds 2–3 months at 35–50°F before planting; keep moist in damp peat moss or sand in a sealed bag with air holes
• Plant in soilless mix in 8" pots; bury each seed as deep as its diameter
• Germination: 1–6 weeks at 70–75°F; keep soil consistently damp
• Transplant outdoors the spring following germination in full sun, well-drained, slightly acidic sandy or loamy soil
• Maintenance: Light pruning to shape; modified central leader form; minimal intervention needed once established
