Grow a Southern heirloom with a story. Jackson Wonder bush lima beans produce short pods of beautifully mottled beans that can be shelled fresh as butterbeans or dried for soups. Originating with Georgia farmer Thomas Jackson in the 1880s, this variety is noted for producing in hot, dry conditions.

What to expect

  • Pods: Approximately 3 inches long, with 3 to 5 beans per pod
  • Seeds: Red when fresh; buff with purple-black mottling when dried
  • Harvest: Approximately 65–68 days to maturity

Planting and care

Direct sow 1–2 weeks after your average last frost, once the soil is warmer than 65°F. Indoor starting is not recommended. For successive harvests, sow again every 7–14 days while your growing season allows, stopping about 60 days before the first fall frost.

Harvest and enjoy

For fresh butterbeans, pick pods when they are plump but before they yellow and dry, then shell the beans. For dry beans, leave pods on the plant until they and the beans are dry and hard. Imagine a bowl of homegrown butterbeans at the table, or a pantry jar of speckled beans ready for soup.
