Pac choi is a traditional Chinese New Year dish that symbolizes luck, prosperity, and long life. It can be served in sauces or stir-fries and enjoyed by the whole family. Baby pac choi can also be used to represent wholeness and a positive start and end to the year.

Pac choi can be eaten raw or cooked in various ways, such as steaming, boiling, grilling, braising, or sautéing. Its stems and leaves have a mildly pungent, mustard-like flavor, suitable for fresh salads, slaws, or as a crunchy vessel for dips. It is commonly used in Asian cuisine, chopped and stuffed in dumplings or spring rolls, halved or quartered in soups, stir-fried, or pickled.

In Asian cuisine, pac choi can be paired with sauces like oyster, hoisin, and soy sauce, along with other ingredients such as sugar, garlic, chicken broth, and sesame oil. It is also used in non-traditional ways such as grilling, salads, pasta dishes, and grain bowls. It pairs well with a variety of ingredients including mushrooms, carrots, bell peppers, and meats like fish, pork, duck, and poultry. To keep fresh for up to a week, store loosely in a plastic bag in the refrigerator's crisper drawer.

Pak choi has curved, thick stems and glossy, dark green leaves. Both are edible, with a crunchy, slightly fibrous texture and a mild, sweet taste. When cooked, the texture becomes tender and the flavor becomes similar to cabbage and spinach.

Growing Directions:

Plant seeds in well-draining soil during cooler weather, preferably spring or fall. Sow seeds directly in the ground or start indoors and transplant when seedlings emerge. Keep soil consistently moist, water regularly, and harvest at 8-10 inches tall by cutting at the base. Consider using row covers for pest and weather protection.

HARVEST :Grow and harvest bok choy microgreens in 7-10 days. For baby bok choy, harvest the entire plant when it reaches 4-6 inches in height. Harvest mature outer leaves individually, allowing for continued growth from the center and longer harvest time. At 12″ tall and before the flower stalk forms, cut the entire plant to avoid bitterness in the leaves.
