This eggplant variety is traditionally recognized in Italian cuisine. The fruit are lavender and white color with green calyx with slight ribbing. Fruit are 5-7” diameter, round-shape, with very mild, delicate flavor with no bitterness and creamy texture.
Like potatoes, tomatoes and hot peppers, rosa bianca eggplant (Solanum melongena) is a member of the Solanaceae family.

This warm-season vegetable grows fruit that's about 4 to 6 inches in diameter and 5 to 7 inches long. Popular for its creamy flesh and mild flavor, rosa bianca eggplant is native to Southeast Asia and well suited to Sunset's Climate Zones H1, H2, 1B and zones 2 to 45. Start the seeds indoors about eight weeks before the last spring frost date in your area.

Start seeds inside 6 weeks before last frost date (or 8 weeks before expected transplanting date). Keep soil warm until emergence (75-80ºF minimum). Seeds will not germinate in cool soil and planting out too early may affect plant vigor. Harden off plants carefully before transplanting. Prepare fertile, well-drained soil. Plant in late spring/ summer (soil temperatures at least above 60ºF) in a very warm and sunny location. Eggplants are heavy feeders so use a balanced fertilizer. Too much nitrogen will produce lush foliage and few fruits.
