Harvesting: When an eggplant's skin becomes glossy, it is almost ripe. To determine ripeness, gently press on the skin; if it remains indented, it can be harvested. The best time to eat eggplant is when it is half its mature size to avoid toughness and bitterness. For optimal taste, use immediately or store in the fridge for up to a week.
