Tender, tasty purplish-black fruits are great in a variety of dishes. Excellent breaded or fried. Eggplants love warm weather but are damaged by cold. Plants produce 4 to 6 large fruit, or more if kept harvested and well watered. Fruit makes a good "boat" for stuffing.

Sowing: Start eggplant seeds indoors for best results. Keep seedlings in sun or under grow light at 80 degrees. Gradually expose them to outdoor elements before planting in 70 degree soil..
Growing: Black Beauty eggplants are most successful during the hot summer months. Depending on your climate, you may need to use row covers, black plastic, or other methods to retain heat. If temperatures drop below 55 degrees F, cover the plants. Once the seedlings have established, use mulch to retain moisture and prevent weed growth. Water the soil regularly and apply fertilizer or organic matter every month.
Harvesting: When an eggplant's skin becomes glossy, it is almost ripe. To determine ripeness, gently press on the skin; if it remains indented, it can be harvested. The best time to eat eggplant is when it is half its mature size to avoid toughness and bitterness. For optimal taste, use immediately or store in the fridge for up to a week. Overripe eggplants are indicated by browning seeds, and some parts are poisonous if eaten.
