Gourmet Shallots with Sweet, Complex Flavor — Easy to Grow from Sets

Dutch Red Shallots are a kitchen essential for any serious cook — rich, sweet, and more nuanced than onions, with a delicate depth that elevates everything from vinaigrettes to braises. These heirloom, organic, non-GMO sets are bolt-resistant, cold-hardy (USDA zones 2–9), and planted in spring for a reliable fall harvest. Each clove multiplies into a cluster of beautiful deep-red bulbs — gourmet quality, grown right in your garden.

Highlights

  • Heirloom, organic, non-GMO — bolt-resistant and cold-hardy
  • Rich, sweet flavor — more complex and delicate than standard onions
  • USDA Zones 2–9; excellent storage variety
  • Young greens usable fresh; mature dry bulbs store through winter

How to Plant

  • When: As early as possible in spring — 2–4 weeks before last frost, as soon as soil is workable
  • Soil: Rich, well-drained organic soil; pH 6.2–6.8; full sun; even moisture throughout growth
  • Separate bulbs into individual cloves; plant with points just covered by soil
  • Spacing: 6" apart in rows 12" apart; water well and mulch to protect from heaving
  • Fertilize: 5-10-5 at 5 lbs per 100 sq ft worked into soil before planting

Harvest & Storage

  • Allow shallots to ripen fully until leaves wither above the neck
  • Remove from garden; knock off dirt and dry for several days
  • Store by roping or hanging in netted bags in a cool, frost-free, dry location through winter

Care Tips

  • Water once a week during dry periods
  • Young shallot shoots resemble grass — weed carefully to avoid damaging plants
