Brassica oleracea 'Pigeon Victoria' is an ornamental flowering cabbage in the classic Pigeon series — known for smooth, broad, flat leaves and beautifully colored centers in shades of purple, rosy, and creamy white against rich green outer leaves. (Plants with smooth margins are classified as flowering cabbage; those with fringed margins as flowering kale — though both are botanically kales forming rosettes.) Grown as an annual for its spectacular cool-weather foliage, it looks especially striking in large mass plantings, as border edging, or as a seasonal replacement for warm-weather annuals in containers over winter. Color develops and intensifies as temperatures drop. Edible, though bred for ornamental impact, not flavor. Late to bolt.
Plant Highlights
- Smooth, broad leaves with purple, rosy, or creamy white centers — color intensifies with cold
- Outstanding in mass plantings, border edging, and winter containers
- Cold tolerant cool-season biennial; grown as an annual for showy fall and winter foliage
- Perfectly round colorful rosette at maturity — late to bolt
- Edible (milder flavor than culinary kale or cabbage)
Growing Guide
Starting indoors: Sow seeds indoors and cover very lightly. Seeds germinate quickly. Grow transplants on and set outside several weeks before the first fall frost. About 12 weeks from sowing to a mature rosette 10 inches tall and 12 inches wide.
Timing: Do not sow too early in warm weather — cool temperatures are needed for the characteristic center coloring to develop. Start 10–12 weeks before the first anticipated fall frost.
Site and soil: Full sun; moist, well-drained soil. Fertilize with a balanced liquid fertilizer during the growing period.
