Canary (Mayocoba / Peruano) Bush Bean Seeds
Grow Canary beans, also known as Mayocoba or Peruano beans, for a creamy, mild-flavored dry bean with a tender skin and meaty texture. The cooked beans have a texture similar to pinto beans and are a favorite in Mexican and Latin American dishes, including refried beans, soups, and stews.
Growing Instructions
- Sow seeds outdoors after the danger of frost has passed and the soil has warmed.
- Choose a sunny spot with fertile, well-drained soil.
- Plant seeds about 1 inch deep and water gently after planting.
- Give bush plants room for good airflow and keep the soil evenly moist while plants establish.
- Avoid waterlogged soil, and water near the base of the plants during dry periods.
Harvesting Dry Beans
- Allow the pods to dry on the plant before harvesting.
- If frost is approaching and pods are still drying, pick them and finish drying indoors.
- Pods are ready to shell when they feel crisp and dry.
- Remove the beans from the pods and store fully dried beans in a clean, dry place.

Use cooked Canary beans in refried beans, soups, stews, and other hearty dishes. Cook dry beans thoroughly before eating.
