This variety, known as Kyoto No. 3, is a robust napa cabbage that can reach up to 7 pounds in weight when mature, despite only growing to about a foot tall. It takes approximately 80 days from sowing for the barrel-shaped heads to form, but the wait is worth it for the large and crunchy leaves with a subtle sweetness and vibrant green color. Perfect for dishes like cabbage rolls or slaw, this vegetable is a prime example of dento yasai, a traditional Japanese favorite known for its mild and delicious taste.

It's best to cook it quickly in order to preserve its crispness. This versatile vegetable is a staple in various Asian dishes, including kimchi, stir-fries, sukiyaki, and soups.
