The Pungent, Pine-Scented Perennial Savory for Year-Round Flavor

Winter Savory (Satureja montana) is the bold, woody perennial cousin of summer savory — with thicker, shinier dark green leaves and a more pungent, peppery flavor with higher thymol content. An evergreen, aromatic shrub that holds its flavor through long cooking, making it an exceptional seasoning for hearty stews, roasted meats, bean dishes, and sausages.

Why Grow Winter Savory?

  • Intense, Lasting Flavor: More pungent than summer savory with a thyme-like bite — excellent in slow-cooked bean dishes, braised meats, sausages, and herb butters.
  • Evergreen Perennial: Comes back year after year with attractive dark green foliage and small white summer flowers that attract beneficial insects.
  • Low Aromatic Hedge: Compact and woody habit makes it ideal for trimming into a low, fragrant border hedge in the herb garden.
  • Container-Friendly: Thrives in pots and performs well on sunny patios, terraces, and kitchen windowsills.
  • Drought Tolerant: Once established, needs very little water — a true low-maintenance perennial.

Growing Guide

For a head start, sow seeds indoors 6 weeks before the last frost. Direct sow in well-drained to dry, neutral to alkaline soil in full sun after the last frost date. Harvest leaves and sprigs once plants reach 6 inches tall. Clip in late morning for best flavor. For drying, cut stems 3–4 inches from the soil and hang upside down in a warm, ventilated space.
