A Fiery Heirloom from India’s Northeast — Intense Heat, Cayenne Versatility
Indian PC1 is a prized hot chilli variety from the Assam region of northeast India — one of the world’s hottest producing regions for capsicum varieties. Its long, narrow fruits ripen from deep green to vibrant red, delivering intense heat in a shape and size similar to cayenne. Similar in culinary use to cayenne, it can substitute in any dish where you want serious heat and bright pepper flavor. Note: Despite sometimes being called Naga Jolokia locally, PC1 is unrelated to Bhut Jolokia or Naga Morich — it is its own distinct, potent variety.

In the Kitchen
Use PC1 chillies fresh or dried in curries, chutneys, hot sauces, and any dish where cayenne would shine. Harvest green for a fresh, grassy heat; allow to ripen red and dry on the plant for a smoky, concentrated pepper to crush or powder. To dry: cut branches, remove leaves, and hang until fully dried.
Growing Guide
- Start indoors: 6 weeks before last frost (or 8 weeks before transplanting); sow ¼" deep
- Germination: Warm soil essential — use a heat mat or warm surface; germination can take 1 week to 1 month
- Soil mix: Use organic seed-starting mix — avoid peat pots, plugs, or standard potting soil
- Harden off carefully before transplanting outdoors
- Transplant: Late spring/early summer; soil temperature at least 60°F; full sun, warm location
- Containers: Use 5-gallon pots minimum; excellent for year-round indoor/outdoor growing
- Fertilize: Avoid excess nitrogen — promotes foliage over fruit; apply compost tea and slow-release fertilizer
- Harvest: With garden scissors when fully mature to avoid damaging the plant; pick regularly to encourage new buds
