The World’s Most Prized Chili Flake — Grow Your Own Aleppo

Aleppo Pepper (Capsicum annuum), known as Pul Biber in Turkish, is a celebrated heirloom from northern Syria and southern Turkey. Fully ripe fruits taste like mildly spicy sweet sugar with hints of salt and cumin — complex, fruity, and deeply savory. Prized worldwide for its exceptional flake and powder, it’s an irreplaceable spice in Middle Eastern and Mediterranean kitchens.

Growing Tips

Plant in full sun with rich, well-draining soil. Amend the planting hole with compost and feed every 2–3 weeks for the first 6 weeks. Mulch the base with 1–2″ of compost to retain moisture. Supplement with LED lights indoors in winter and gently brush the plant to promote pollination.

Harvest Tips

Harvest with clean garden scissors when fruits are fully red and slightly soft. Dry whole or slice and dehydrate for premium Aleppo flakes.
