Starting From Seed
Start indoors ahead of your local spring planting season, or time a later sowing so plants develop as temperatures cool. Sow approximately 1/2 inch deep in moist, well-drained seed-starting mix. Keep the mix evenly moist without waterlogging and provide bright light once seedlings emerge.
Transplanting and Care
Harden seedlings off gradually before planting outdoors. Choose full sun and fertile, well-drained soil. Allow ample room for heads to develop and for air to circulate between plants.
Water consistently, especially during head formation. Avoid abrupt changes from very dry to saturated soil. Mulch can help retain moisture and reduce weeds. Monitor leaves regularly for damage so problems can be addressed early.
Harvesting
Harvest when heads feel firm and reach your preferred size. Cut at the base with a clean, sharp knife. Maturity timing and final head size vary with temperature, spacing, soil fertility, and moisture.
Kitchen Use and Storage
Shred leaves for slaw, add them to soups and stews, or sauté and braise them. Larger leaves are useful for stuffed cabbage and wraps. Refrigerate harvested heads and wash before preparation.
