Purple Choy Sum (Kosaitai / Hon Tsai Tai) is a striking and popular Chinese specialty vegetable with vivid purple leaf stalks and veins, dark green leaves, and cheerful yellow flowers. Also known as Yu Choy Sum, flowering pak choy, or Chinese flowering cabbage, this heirloom variety is prized for its tender, mildly sweet stalks and its productive, branching habit that delivers an extended harvest throughout the cool season.

Harvest the main stalk when it reaches 10–14" tall and just before flowering — after cutting, the plant branches freely to provide weeks of continuous harvest. Stalks, leaves, and flower buds are all edible and delicious in stir-fries, soups, and steamed dishes.
