Okra
Okra is a versatile vegetable that belongs to the same family as hibiscus and hollyhock. Its tender seed pods can be used in a variety of dishes, including gumbo and stews, and can even be roasted. The heirloom variety, Abelmoschus esculentus, produces long, slender pods that remain tender even when they reach 6 to 10 inches in length.
