This Caribbean sweet potato boasts a light yellow to gold skin when harvested, with a cream to orange interior perfect for eating, baking, and cooking. Its purple stems make it an attractive addition to smaller gardens. Growing time is approximately 100+ days. Also known as a batata ,Boniato , Cuban sweet potato, white yam, Florida yam, camote, kamote, Caribbean sweet potato, or kumara—but , it's not a yam. It is also very similar in appearance and taste to what's referred to as a Japanese sweet potato.

In the United States, the term sweet potato is typically linked to orange-fleshed tubers known as yams, but in Central America, Latin America, The caribbean and Asia, the white-fleshed Batata has long been synonymous with sweet potato. According to legend, the Batata gained its name from early Spanish explorers who discovered the tuber was not harmful and therefore called it the Spanish word for “beneficial” or “edible.”
Easy to grow and nutritious, sweet potatoes also store well. Set these plants 12 to 15 inches apart in 3-foot rows in a sunny, well-drained spot. After harvest, cure the potatoes in a warm (85 degrees Fahrenheit is preferable) location for 2 weeks, then store at 60 degrees Fahrenheit for 6 to 8 weeks.

Good source of fiber and provides potassium. Like most sweet potatoes, it has a low glycemic index, essential for weight watchers and diabetics. Some studies have discovered significant antibacterial and antifungal properties.
Using a small hand trowel, dig a hole about 4" or 5" deep and 3" wide. Place one slip in each hole with the roots pointing down. Position the slip so that the bottom half will be covered with dirt while the top half with all of the new leaves is above ground.
Carefully fill the hole with dirt so that you don't bruise the new plant. Sweet potatoes don't like to be bruised or bumped around too much. When you have completely covered it with soil, gently press the plant and surrounding dirt to set the plant and to remove any remaining air pockets. Continue the same way until all of your slips are planted.
