Its delicate pale green leaves and tender stems are perfect for use in stir-fry and soup. This dwarf variation has a slower growth rate and will require thinning during growth. The Callaloo is part of the amaranth family. Callaloo is very nutritious particularly potent in irion, vitamin C, flavonoids, calcium, vitamin A, flavonoids and other phytochemicals.
Versatile and tasty, Callaloo Seeds can replace spinach in any recipe. Traditional callaloo recipes are also readily available online.
How to grow
Prepare soil for spring planting of callaloo seeds by breaking up to a 12-inch depth, testing pH, and amending if needed. Sow when outdoor temperatures are steady at 65°F and lightly rake seeds into soil.
Water the soil with a garden hose and maintain moisture throughout the 10-14 day germination process. Continue to keep soil moist as callaloo seedlings grow and increase depth of watering once second set of leaves develop.
Spread a 3-inch layer of bark mulch around the callaloo plants to deter weeds. Mulching will also improve drainage. Harvest the leaves as you need them for your recipes by plucking them off of the plants using your fingertips.

They are high in fiber, iron and calcium, and contain large amounts of vitamins A, B, and C, lutein, amino acids, and carotene.
