Authentic Jamaican Callaloo, a staple in the Jamaican diet, is a leafy vegetable often used in soups and paired with codfish. Enjoy it steamed, sauteed, or in Pepper Pot soup with onions, garlic, tomato, thyme, and Scotch bonnet pepper.
Other Common Names:Chinese Spinach xian cai, hiyu-na, edible amaranth, spinach, bayam, callaloo, klaroen, tampala, in tsoi, Java hahrensoh, or yin choi.
Jamaican Callaloo is a popular, nutrient-rich ingredient in Jamaican cuisine, with high levels of iron, Vitamin C, flavonoids, calcium, and Vitamin A. It can be used in a variety of dishes and its juice offers many nutritional benefits.
Culinary Tips
Use in stir-fries, soups, and salads. The leaves, seeds, and stems can be eaten. If the stems are older or thick, peel or chunk them into segments about 1-2” long and cook them before consuming. Delightful when paired with mint flavoring. Prepare the seeds like quinoa.
How to Grow Green Leaf Amaranth
Plant seeds in warm, sunny area after last frost, regardless of time of year. Broadcast and thin during growth. Keep soil moist and weed-free. Thrives in containers and can be grown with tall/climbing crops for heat and shelter. No need for fertilizer.
Harvesting Green Leaf Amaranth
Harvest the plant in different stages: microgreens, 4” tall seedlings, immature plant, or individual leaves. Obtain seeds by cutting the dried seed pods and separating from chaff.
