Cowhorn Okra is a versatile vegetable with tender seed pods that can be used in many dishes. It's an annual plant that thrives in hot climates and can be grown in all hardiness zones. The heirloom variety, Abelmoschus esculentus, produces long, slender pods that stay tender even when they're 6-10 inches long. It matures in just 55 days and is great for pickling.

Culinary tips: Okra can be prepared fresh, boiled, fried, canned and pickled. Use in salad, stir-fries, gumbo, or pickled. Outstanding tempura-style or fried with cornmeal. Red color is lost when cooked.

Sowing: Shorten growing season? Start indoors 3-4 weeks after frost. Soak seeds overnight for quicker germination. Plant 2-3 per pot in 80-90 degree F. Trim weaker plants. Plant outside at 60 degree F. Thin to 12-15" apart. Direct sowing? Plant 3/4" deep and later thin to 12-15" apart.
Growing: When the seedlings reach a height of 4", apply mulch to conserve moisture and control weeds. Keep the plants moist during dry weather. In cooler climates, it may be necessary to apply black plastic or provide row covers for adequate heat.
Harvesting: Harvest the pods at 5-6" for best taste and tenderness. This variety is spineless for a painless harvest. stays tender at its full length, and can be harvested at any length up to 7". This variety is spineless for a painless harvest.
