Ingredients
- 2 medium Spanish onions, cut into large chunks
- 4 cubanelle peppers, stemmed, seeded, and cut into chunks

- 8 Ají Dulce (Ají Cachucha) peppers
- 4 leaves culantro
- 4 ripe plum tomatoes, cored and cut into chunks
- 1 large red bell pepper, cored, seeded, and roughly chopped
- Kosher salt to taste
Directions
- Place onions and cubanelle peppers in a food processor fitted with a steel blade. Pulse until coarsely chopped.
- With the motor running, add the remaining ingredients one at a time through the feed tube and process until smooth.
- Season with salt. Transfer to a container and refrigerate for up to 3 days, or freeze in portions for up to 6 months.
