Know your sorrel
This is leafy garden sorrel, grown for its tart green leaves. It is not the hibiscus or roselle commonly called sorrel in Caribbean drinks.
- Type: Large Leaf garden sorrel, a perennial culinary herb where growing conditions allow
- Flavor: Tart and lemony
- Main harvest: Young, tender leaves
- Approximate height: 16–24 inches, varying with conditions and flowering
- Light: Full sun to partial shade
- Soil: Rich, moisture-retentive soil that drains freely
- Growing spaces: Herb gardens, vegetable beds, raised beds, and containers with drainage
When to sow
Start indoors before your expected last spring frost, or direct sow in spring when soil conditions are suitable. Adjust timing to your local climate. Cool, mild weather generally favors tender leaf growth, while hot conditions can encourage flowering.
Sowing guide
- Prepare a fine seedbed or fill clean containers with moist seed-starting mix.
- Sow shallowly, covering lightly with no more than approximately 1/4 inch of mix.
- Water gently and keep the surface consistently moist without waterlogging.
- Provide good light and moderate warmth, around 68°F where practical.
- Allow approximately 7–14 days for emergence under suitable conditions; germination may take longer.
- Thin or transplant approximately 9–12 inches apart, allowing extra room as established clumps expand.
Gradually acclimate indoor-grown seedlings to outdoor conditions before transplanting after frost danger has passed. Use containers with drainage holes and enough root space for ongoing growth.
Growing care
- Water regularly during establishment and dry weather to maintain even moisture.
- Mulch lightly around established plants, keeping mulch away from the crown.
- Remove weeds early to reduce competition.
- Cut off developing flower stalks if leaf production is your priority; this does not guarantee that flowering will stop.
- Inspect for slugs and damaged foliage.
- Divide crowded established clumps when needed, rather than on a fixed annual schedule.
Perennial performance and winter survival depend on climate, drainage, and plant maturity. Follow local guidance for winter protection rather than assuming the same results in every garden.
Harvesting
Once plants are well established, pick a modest number of outer leaves, often when approximately 3–5 inches long. Leave the central growing point and enough foliage for recovery. Young leaves are generally more tender; older leaves can be stronger and tougher.
Regular light picking is preferable to stripping a young plant bare. Continued harvest depends on plant health and growing conditions.
Kitchen use and storage
Wash leaves thoroughly. Use small amounts to add tartness to mixed salads, sauces, and soups, tasting as you go. Sorrel softens quickly during cooking and its green color can darken. Refrigerate fresh leaves promptly or freeze portions for later cooked dishes.
Sorrel contains oxalic acid, so use it in moderation as a culinary ingredient rather than eating large quantities. Anyone advised to limit dietary oxalates should follow their healthcare professional's guidance.
Seed storage
Store unused seeds sealed in a cool, dry, dark place away from moisture and temperature extremes. Seeds supplied are for planting, not direct consumption.
