Numane Pickling Melon – Japanese White Melon (Cucumis melo var. conomon)
The Numane Pickling Melon, known in Japan as Oshiro Uri (“white melon”), is a classic Japanese pickling variety with light green skin that turns nearly white at full maturity. Growing up to 12 inches long and resembling an oversized, plump cucumber, Numane is the pickling melon of choice across Japan and much of Asia — though its culinary versatility extends well beyond the pickle jar. Young fruit can be eaten raw like a cucumber; mature melons are excellent stuffed with beef, pork, chicken, or vegetables and baked, or sliced into stir-fries alongside seafood.

Growing Instructions
- Needs a warm climate. Sow seeds in spring/summer after last frost in fertile, well-drained soil in a warm, sunny location.
- Hill planting: Form 1-ft. diameter mounds, 3–4" tall; space mounds 3–5 feet apart. Sow 2–3 seeds per mound; thin to the strongest plant.
- Keep soil consistently moist and fertilize regularly throughout the season.
- Train vines on a vertical trellis for better air circulation and easier harvesting, or allow to sprawl.
Harvesting
- Harvest young for fresh eating, when fruit is still green and cucumber-like in texture.
- For pickling, harvest at medium size before the skin turns white.
- For stuffing or stir-frying, harvest at full size — up to 12" long.
